These fluffy tots are the perfect way to use up those leftover mashed potatoes. Add any flavour combination you want for your families new favourite treat!
I LOVE mashed potatoes, weird I know, but for me, they are usually the best part of the meal. While most people are going for second of the roast beef, I’m hitting up the bowl of mash! That is if they are done right. We have all had bad mashed potatoes right, and it just makes me a little bit sad. I’m mean really, how hard are they to mess up.
So recently I have been taking Gordon Ramsey’s Master Class where he made Pomme Puree, and let’s just my potato game has been upped. And i’m a bit scared to say that if Gordon tried my mashed potatoes a few weeks ago, would he have yell at me? Let’s just say, I hope to never find out and I will always warm my cream from now on before adding it, I promise.
Now the only problem with mashed potatoes is that they are never as good the next day and often get pushed to the back of the fridge and eventually tossed. But these tots can change all that and make you actually want to use those puppies up. They may not be completely like the original ones, but I think the crispy outside and soft mashed potato centre might be even better. .
They are a bit of a labour of love shaping each one and rolling in the bread crumbs, but I certainly think they are worth. it. Turn on some tunes and jam out while rolling some tots! They also make about 45 tots, so bake a few and throw the rest in the freezer for a quick weeknight side or a late night snack.

3 cups mashed potatoes
1/2 cup grated cheddar cheese
2 green onions
1/2 tsp garlic salt (optional)
salt + pepper
1 cup bread crumbs
Preheat oven to 425. Combine cold mashed potatoes, cheese and chopped green onion. At this point taste your potato mixture to decide if you need garlic, salt + pepper. (I like my mashed potatoes well seasoned so if they were seasoned the day before you may not need to add any additional seasoning). Once it is seasoned to your liking add 1 egg and stir until combined. Using a teaspoon scoop a small amount of potato mixture into your hand and form your cylinder shaped tot and place on a parchment lined baking sheet. Continue until all of your mixture is used up. In a small bowl place breadcrumbs, in a second bowl crack your egg and beat gently. Dip each individual tot in the egg then the breadcrumbs. Put back on baking sheet and continue until each one is covered. Lightly spray your tots with the cooking spray (I like to use a canola oil spray but anything would work) and bake 30-40 minutes or until crispy; turning every 10 minutes and spraying with additional oil if needed.
*You can basically make any flavour combo with these, add some bacon for loaded tots or fresh thyme and gouda and serve them as a fun appetizer at your next party.
