Healthyish Chocolate Peanut Butter Bites

These chocolate peanut butter bites are a great little snack that you don’t need to feel all that guilty about. The peanuts butter filling is sweetened only by dates so the only sugar is in the chocolate coating.

So, today is National Peanut Butter day which, if you're like most people, is a great day! In my opinion, one of the best treats out there is the peanut butter cup - I think it’s the salty/sweet combo that makes them so delicious.

Now, if you want your peanut butter bites to look like the classic it’s actually really easy. Using paper muffin liners place a small amount of chocolate in the bottom of the cup, put a scoop of peanut butter then cover with chocolate. I tend to like a more rustic look with my baking so I didn’t bother with these extra steps but if have the time and want them to look a traditional peanut butter cup, go for it!

I also topped them off with sea salt, which with chocolate we all know is a perfect pairing. Also, these are almost better frozen - not sure why they just are!

So whatever you do to enjoy your Friday just be sure to top it off with some peanut butter!

Ingredients

3 1/2 cups roasted peanuts

4 whole dates

3 tbsp vanilla

1 tbsp olive oil

12 oz chocolate

coarse sea salt

Instructions

In a food processor or Vitamix combine peanuts, dates and vanilla + oil. Pulse until mixture is combined yet still has a texture. Form into 1 tsp balls and place on a cookie sheet. Continue until all of your mixture has been used. Gently press each ball down then freeze for 1 hour.

Over a double boiler melt chopped chocolate over low heat. Take frozen peanuts balls and dip in chocolate. Place on parchment paper and allow to dry 2-3 minutes then sprinkle with course sea salt.
