This yummy creamy coconut citrus sprits will make you feel like your on a tropical vacation in your own living room!
Ok so by now you probably know about you serious love of citrus and this coconut citrus spritz is just adding to this obsession.
Something about citrus just feels like spring, not only are they bright and cheery but they also have that tartness that is a perfect way to lighten things up.
Now when I was making this cocktail I certainly was reminiscing about the classic Pina Colada which is so yummy and tropical, but not something you want to drink every day. Now, a coconut citrus spritz, I could probably drink this every day!
So, if you want to really pretend your on vacation why no blend this all up with a bit of ice? I don’t know about you but the only time I ever have blended cocktail is lying by a pool, but may drinking this mid-winter with our eyes closed would make winters just a little bit shorts! Worth a try right!

3/4 cup sugar
2 3/4 cup water
1 1/4 cup coconut water
1/2 can coconut milk
4 oz vodka
In a small saucepan combine sugar, 3/4 cup of water and the zest of 1 lemon. Bring to a simmer and stir until sugar is fully dissolved.
In a blender place coconut milk and coconut water and blend until smooth. In a medium bowl juice lemons and limes then add in 2-3 tablespoons of coconut milk mixture and whisk so that it is fully combined. Pour lemon mixture into the blender and blend for 1 minute.
To serve fill 4 cocktail glasses 4 ice cubes, coconut lemon-lime mixture and, 1 oz of vodka. Top with soda water and serve immediately.
*You need to be sure to add a small amount of the coconut milk into the citrus to allow it to all come together. If you skip this step you risk the coconut milk separating.
