Cheesy Crackers with Tomato Onion Jam

These cheesy salty crackers and sweet tomato onion jam make for the perfect flavour combination any day of the week.

So have you guys made crackers before? I tend to make seedy crackers for snacking but every once in a while you just need a really yummy treat that will make everyone ooh and ahh. Those times when you want to treat yourself and your friends are when these cheesy crackers need to be made!

I mean seriously, these are full of cheese, butter and walnuts - how can you go wrong with that combo? The other great thing about these crackers is that they are so easy to make. I threw all of the ingredients into my food processor and it literally did all the work for me.

Now while these crackers can totally sand alone sometimes you just want to add a little something extra! This tomato onion jam is so yummy and the perfect complement for that sweet and salty flavour combo.

I love making quick “jams” like this for a charcuterie, it really elevates everything else you put out and people always really appreciate (and are often shocked) that you made it yourself.

prep time 10 minutes + 1 hour to chill

cook time 15 minutes

total time 1 hour 25 minutes

servings 16 - 24 crackers

Ingredients

1/2 cup pecans finely chopped

1 cup flour

1 tbsp cornstarch

2 cups grated cheddar cheese

1/2 cup butter

1/8 tsp cayenne pepper

salt + pepper to taste

In a large bowl or food processor combine all ingredients - stirring until dough holds together. Divide into 2 portions then form into a log - wrapping in plastic wrap. Cool in the fridge for a minimum of 1 hour.

Preheat oven to 400. Once the dough is chilled slice log into 1/4 inch thick slices then bake for 12-15 minutes or until lightly browned.

Tomato Onion Jam

3 tbsp butter

1 large white onion

1 cup cherry tomatoes

1/4 cup white sugar

1/4 cup balsamic vinegar

1 tbsp fresh rosemary

salt + pepper to taste

In a medium saucepan melt butter then add in thinly sliced white onion. Cook over medium heat until onions are caramelized and soft (approx. 10-15 minutes). Add in cherry tomatoes and cook until tomatoes break down.

Add in sugar, balsamic, chopped rosemary and salt + pepper. Cook until your onions are a jam-like consistency. Allow to cool before serving.
