BBQ Chicken Hand Pies

These delicious little hand pies are a perfect appetizer for your holiday parties, or a fun way to switch up pizza night!

Well, it’s finally December. I must say, being in California sure does lose that Christmas feeling, except at night. When it’s dark outside if you don’t look out the window at the palm trees you can kind of imagine that there is snow and that wearing cozy sweaters and watching Holiday movies is totally acceptable.

Now what goest better with movie night - pizza. I don’t know about you but generally pizza comes from the delivery guy and less often from my own oven, but sometimes it’s nice to switch things up. While this may not be exactly a lighter version, it does go perfectly with a tossed salad so you can feel a little bit better about your dinner choices.

Now these little treasures also are the perfect addition to your holiday parties. Prep these earlier in the day and bake just before your guests arrive for the perfect warm appetizer that look so cute, and taste even better!

prep time 20 minutes

cook time 25 minutes

total time 45 minutes

servings 6

1 tbsp olive oil

1 cup cooked shredded chicken

1/3 cup red onion

1/3 cup cilantro

1 cup shredded mozzarella

3/4 cup bbq sauce

Sesame seeds

1 pkg puffed pastry (2 sheets)

1 egg

Preheat oven to 400. Remove puffed pastry from freezer to allow to thaw. In a medium sized frying pan preheat olive oil then add thinly sliced red onions and cook until softened and begins to become translucent. Add in shredded chicken, roughly chopped cilantro and bbq sauce - stir until combined. Remove from heat and mix in mozzarella, set aside.

On a cutting board place one sheet of thawed puffed pastry. Cut into 6 rectangles (or smaller if using as an appetizer). Place 1/6th of your filling into the centre of 3 of your rectangles (approx. 1/4 cup). Put remaining 3 rectangles on top and using a fork, seal the edges of your hand pies. Place on a parchment lined baking sheet and continue with remaining puffed pastry.

In a small bowl beat egg. Brush a good amount of egg over each hand pie including sealed edges then sprinkle with sesame seeds. Bake 25 min or until golden brown.
