Fruit Crisp - one of my favourites. I would honestly choose a crisp of any kind over pie any day, plus, just like leftover pizza it makes for a super delicious leftover breakfast!
So while the classic apple crisp is always a winner, sometimes it’s nice to switch things up a little bit. This combo of strawberries, blueberries + peaches work perfectly, plus they are at the height of freshness so they are as sweet and juicy as you can possibly get.
The other great thing about a crisp is that it comes together so quickly. You can have it all ready to go in about 15 minutes then just bake and serve. Now, I will say that ice cream on top is an absolute must, and it must be served warm so that the ice cream melts a little bit. I mean seriously, you can’t get much better than that!
So next time you need a quick, delicious, and super easy dessert whip this up and serve it warm from the oven - it’s perfection!
prep time 15 minutes
cook time 35 minutes
total time 50 minutes
servings 4 - 6
2 cups strawberries
1 1/2 cups blueberries
1 tsp cinnamon
1 cup oats
3/4 cup flour
3/4 cup brown sugar

Preheat oven to 370. In a large oven safe dish layer sliced peaches, halved strawberries and blueberries, then sprinkle the cinnamon over the top of the fruit.
In a medium bowl combine oats, flour and brown sugar. Using a cheese grater, grate the butter into the flour and toss until it is fully combined and crumbly.
Sprinkle the crumble over the fruit in an even layer then bake for 25-35 minutes or until the top is lightly browned.
