These festive little treats just scream Christmas to me! They have been a yearly tradition for as long as I can remember and with how simple they are to make, it’s a tradition that won’t be broken any time soon.
So these cookies have so many different names - Swedish Butter Balls, Italian Wedding Cookies, Russian Tea Cakes - but my personal favourite is the Snowball Cookie. The powdered sugar makes them look so festive and literally just like sugary little snowballs.
These cookies bring back so many memories from my childhood. Growing up in my house the lights on the tree were always on and Christmas music was always playing - we are a family that is REALLY into Christmas!
The reason why we baked so much was that at the time my parents had a business, and every year we would make up a bunch of trays of delicious treats to give to their clients. This gave us the perfect excuse to make a TON of stuff and not have to eat it all ourselves.
These cookies always made an appearance and are one of my favourites. Maybe because they are so light and airy or maybe because icing sugar on the outside reminds me to the centre of an Oreo. Either way, you can’t go wrong.

1 cup butter softened
1/2 cup icing sugar + 1/2 cup for rolling
1 tsp vanilla
2 1/4 cup flour
1 cup finely chopped pecans
Preheat oven to 400. Cream together butter and 1/2 cup icing sugar and vanilla until well combined. Add flour and mix well then stir in pecans.
Roll into 1 inch balls and place on baking sheet. Bake 8-12 min or until very lightly golden. Cool on a cooling rack for 5 minutes then while still slightly warm roll in remaining 1/2 cup of icing sugar. Return to cooling rack. Once complete cooled roll a second time in icing sugar.
